Found this recipe online so I won't take credit for it...Slightly modified and tried it last night; it was incredible...Tasted like BACON...leftovers in the morning were even better...try it and you may actually like bluefish...
4 5-oz. skinless, boneless bluefish fillets (remove all dark meat)
Freshly ground black pepper to taste (no salt as bacon contains salt)
6-8 slices bacon (I used THICK CUT Hickory Smoked Bacon)
Dried Thyme leaves (add sprig to top for aesthetics if you wish)
Teaspoon of Lemon Juice
Splash of white wine (Chardonnay)
1. Heat oven to 425°. Season bluefish generously with thyme & pepper. Wrap each bluefish filet crosswise with 2–3 strips bacon and tuck two sprigs thyme (if used) in between the bacon and each filet; set aside.
2. Drizzle fish with lemon juice and white wine bake/roast until filets are cooked through and bacon is crispy, about 12-15 minutes. Set oven to broil to crisp bacon, if necessary.
