They come out really good. Wilson gave me his to throw in the smoker with mine. A quick brine then a short time in the smoker, the meat comes right off those tiny little bones.

Andy... how long did you smoke them for? I'm gonna try smokin' my next batch (whenever I finally catch a batch, already) Smoked fish are great!!:D

Under the recipes section of NJF there is alot about smoking.

Brine overnite, (sea salt, pepper, brown sugar) smoke for about 6 hours depending on the size of the fish.

Applewood is the bomb !
