Broiled Bluefish with a Chipolte sauce, Grilled Zucchini, Eggplant, Jersey Corn and Jersey Tomato.
All from the garden and the local Party Boats... Compliments of the Prowler V,
3 6-8oz Bluefish fillets
1/2 cup Italian Dressing. I used Wishbone Robusto
1/4 cup canola oil
1 lg Zucchini
1 lg Eggplant
2 lg Jersey Tomatoes
3 ears Jersey Corn
Container of Wegmans Chipolite Dip
Marinate the Bluefish fillets in the Italian dressing at room temperature for about an hour
Slice Eggplant and Zucchini and brush with oil.
Boil corn and cut off the cob, set aside
Slice tomatoes and set aside
Heat grill and grill Veggies a few minutes on each side on high heat
Heat pan, spray with pan and cook fish 2 minutes on each side on high heat till done.
Serve as shown with chipoltie sauce heated and potato salad or fries
