Made some awesome fish tacos last night, I can't begin to tell you how good these are, could use any fish in them too.
Cut fish into strips and chunks, I left the darker part out. Squeezed a lime over them and left in the fridge for 2 hours.
Mixed a slaw using 3 cups of bagged cole slaw and a whole bunch of cilantro (probably about a cup chopped)
Sauce, one tbls of veg oil, 2 tbls honey, squeezed in one lime, added some ms. dash (if you got cumin, use that as an option)
I mixed 1/2 of the sauce into the salw, used the other 1/2 to dress the tacos.
Last made a chipolte mayo using a cup of mayo, 2 of the bigger chipotle chilies in a can. They are in adobo sauce, use a spoonfull to taste of the sauce as well, a 1/4 tespoon of salt and a 1/8 teaspoon of cayenne pepper.
Pan fried the mahi, warmed some flour tortillas, put the chipolte mayo on the tortilla, added a couple peices of fish, topped with the slaw, added a couple more pieces of the fish, drizzled the sauce over them.
The whole meal cost me a couple only a couple bucks to make, the slaw mix was 1.50, the chipolte in sauce was under a buck, the two limes under a buck and the rest in the cabinet..... o
h yeah, the mahi fillet was only $400 (chartered)
