After our cod trip on the Tuna.com out of Gloucester MA. we had some friends and family over to enjoy the bounty. I love to eat cod as much as I like to catch it and it is great fried in Panko.
Ingredients
8 6oz Codfish fillets
1/2 cup instant flour
1 cup Panko Crumbs
3 egg beaten
1 cup canola oil
Directions
Heat oil
Coat the fish in flour
Dip in the egg
Coat with Panko
Fry in canola oil until golden
Serve with lemon wedges, french fries and tartar sauce
Enjoy!!
