In the spirit of football, does anyone have any good wing recipes? I use the common hooters wing recipe:

Ingredients:
Vegetable oil -- for frying
1/4 cup butter
1/4 cup Franks Hot Sauce
1 dash ground pepper
1 dash garlic powder
1/2 cup all-purpose flour
1/4 teaspoon paprika
1/4 teaspoon cayenne pepper
1/4 teaspoon salt
10 chicken wing pieces

Heat in oil at 375 degrees for 10 minutes. Melt the butter in the hotsauce and coat the wings. Excellant.

I am considering frying them without the breading for this weekend, never tried them that way. Anyone else?

Buy the whole wings. Crack em strait between the drum and wingette. Cook them on the grill until nice and crispy. Get you're largest bowl throw in some wings and top with Nance's hot wing sauce ( or your own ) roll and swirl the bowl until wings are coated.

This is how I do it. First I coat (dust) Wingettes with flour. Just put about 3 spoons of flour in a plastic bag add wings and shake. Bang the wings together over the sink to remove the excess flour. Place on a roasting rack skin side up. I use a oil sprayer (Misto) to lightly apply olive oil to the wings. Bake at 375 degrees for about 35 - 40 minutes. Turn wings over a bake at 400 degrees for about 10 minutes more of until they look crispy.
Toss in your favorite hot sauce and eat.
I like Crystal hot sauce with a dash of Cumin and garlic powder added to about 3-4 tablespoons of butter melted in a pan sitting on the stove while the wings cook.
Don't forget the celery and blue cheese!

Went to school in Buffalo back in the early '80 and they used to deep fry the wings and then toss them in a melted butter and cayenne pepper sauce. I prefer to grill them and make the sauce basically the same way although I don't discuss it with my cardiologist. Lately I've been also adding some Old Cape Cod Smokey and Spicy Chipolte sauce to the cayenne pepper sauce (I'will also tone down the bad stuff by replacing half the butter with Smart Balance...sometimes).
Got a forty pack of wings defrosting on the counter right now as a matter of fact. I like to get some family packs from Costco and cut them up (I throw away the wing tips but some people leave them on) and then freeze them in bags of 20 or 40.

take them out & mix them with the sauce and put em under a broiler for a minute then serve. the meat will pull right off the bone & it's a healthier option then frying..

they stay nice and crispy that way too,def better than soggy wings

Ive done the baking thing before too. The McCormicks Buffalo Wing packets are awesome.

Have had Hooters wings, good but at least you got the Franks Red Hot Sauce. **thumbs up to that**

Not Buffalo Wings, but good wings nonetheless:

Cut up wings and place in large bowl.
Add salt and black pepper to taste
Add 1 cup chopped garlic and mix thoroughly. Cover bowl and let the wings sit in the fridge for a few hours.

Place wings on skewers (soaked in water) then onto the grill at its lowest setting. Baste wings with honey every 10 minutes or so, cook until done (on my grill its usually about an hour) Good Stuff!

gonna make some Leifs clams casino for sunday too...

as for the wings, I think I will crisp em up on the x-large foreman, then the Hooters sauce.

Franks now makes a wing sauce that is great right out of the bottle. No need to mix the hot sauce with butter and other goodies.

I like to cook the wings well done on the grill and throw them in a tupperware bowl with some of the Franks wing sauce, put on the lid, and shake em up.
