There are lots but here are two of my fav's...feel free to add yours.
Duffman: 10/07/08 on Andy S NJF tuna trip...

Some Blackfish Slang
I rolled him - You had a good bite, got a few cranks on the fish but lost it
Roller Skating - Moving around the boat from spot to spot looking for other people's fish
Mugging - The act of stealing, pushing or bullying someone out of their spot when they catch a fish
Puller - An older and wiser Blackfisherman. Opposite of Young Blood
Piece – A specific spot on a rough rocky or snaggy bottom where you donate your tackle
Yoh Dolla – The first keeper fish caught where everyone (even cheap skates when forced to) pays you a dollar

Not exactly a fishing quote but here it goes…….blue fishing on a charter out of Cos Cob Connecticut in the 80’s. One guy asks for a beer and someone hands him a Coors light.
His response……Coors light is fuc&ing in a canoe, too close to water. Never forgot it. Laughing to this day. ;)

My thoughts on tournament fishing were expressed very simply and with great eloquence many years ago, by the late great Frank Woolner-
Its one of my all time favorite quotes on fishing in the modern age.
"Fishing should not be a competitive sport, it should be a contemplative sport"..
that phrase has stuck in my head for decades, so in my case its a very memorable phrase...

I got a quote, but a FUNNIER STORY. I knew a guy from Philly, but never knew He liked fishing, once that was established we fished A LOT TOGETHER. One trip He says, "If I don't WIN POOL, I'm going home Broke". I'll date this trip best I can, WE were shoulder to shoulder on a Belmar Party boat (forget name) bailing Whiting. My buddy wins POOL. I ask, how much U give Mates, He tells me ALL, $15.00. Appeared only me and Him entered POOL. I got way more funny stories of me and this guys antics.
We were catching Whiting on Mackerel rigs , five at a time, mates took them off hook, MICROWAVE, and dish out. Man, they were the Days.
