Anyone have a good way to cook Drum?????????????

Think I would play catch & release on the big ones Captain. I tried a few ways last year and nothing worked. :( Of course I know ther are some much better cooks on this site than me.:D

The big ones I let go.... But In the past I have cook them like striper on the grill. I just wanted to see if anybody would have a different way to cook them....

if your talking about black drum , down here in fl, alot of people will just cook it on a grill with the scales still on in facing down, they call it drum on the half shell. another way you can just take skin off i put little olive oil on it bake in oven 325. season some cajaun fish spice brush on some butter couple mins befor done. they also make excellent drum cake's make same way as maryland crab cakes but with black drum they are killer!:) just caught my self few 8 pounders along with a 7# red drum,and pompano in the surf today so doing a big cookout this weekend.

I've been told that some drum will have worms or parasites in them that can be seen.

Has anyone seen this? Can they be cut out like some cod worms?

The worms I have seen were in the tail section, easily trimmed off. As far as cooking, I have cooked the rib sections with barbecue sauce. Very tasty, and the ribs were easy to pick up and chew the meat off!

Yes Drum can have worms and I would just cut that section on meat out. I am going to try the Idea of drum cakes with one and with the other I am going to try the cajaun spice. Thanks for the info.

I would cook it on a cedar board with any spices that you like, when it's done throw out the fish, and eat the board. i use the same recipie for bluefish
(LOL).

I find this thread very interesting... I am going black drum fishing in few weeks out of Cape May.
There are some big black drum over there during the month of May.
I do like to eat my catch :D

So what do you consider drum fish that is too big to eat (tastes bad)?

Does it really taste bad?

What if I pan fry the fillet or bake the fish with garlic, ginger and teriyaki sauce?
I usually bake stripers or cod like that...

I fish for black drum all the time around LBI. I am also going to be going to Cape May in May to fish for the larger Black Drum. From what I know they are very good and that all on my friends love them but they do not eat the really large ones. Many of the Black Drum have worms in them but if you find them just cut that peice out. Most of the ones I catch are in the 20 to 30 pound range. I was just looking for another way to cook them. Good luck in Cape May and who are you going with or chartering their. When I go to fish there I go with Off Duty. Capt. Joe is a great guy and does very well with Black Drum and Stripers.
