Why do you need a set? I have a Cutco that works on everything.
My buddy has a Dexter that he uses for everything as do most of the mates who use the same knife every day.

In the kitchen or on the boat?

Boat: carbon steel dexters

Kitchen: wustoff classic, henkel or shun Damascus steel.

They can range from $100 to $1500+ for a set of primo knives...

Use different length for different fish. I like using a shorter blade for say Seabass, Cutting Stripers I use a beefer blade to start up by the head. ECT..

Dexter is OK but Victorinox knives are much better IMO.

I fish up in MA & NH a lot and as you know Dexter factory is right up there in MA and promoted on a lot of the fleets and commercial boats. Many captains I fish with have switched to Victorinox knives simply because they have better edge retention and outlast Dexters.

Also great quality knife to have but with a shorter blade made by Morakniv : https://morakniv.se/en/product/fishing-comfort-fillet-155/

It would be the Rapala NK03039-BRK Fish N Fillet. I bought one for myself and another as a gift and we both love it. I'm now using it for almost everything. You will NOT be disappointed with this knife (https://eatrbox.com/best-fish-fillet-knife/).

Sharpen a carbon DEXTER on a work sharp .
You won’t consider using any other knife .
The edge lasts weeks between sharpening instead of a few fish like when using a steel or Accusharp .
